Warm and hearty dishes like this are favoured in winter, and we’ll definitely take all the tasty meals we can get during Covid-19. Healthy and nutritious, this hits all the right notes and the addition of the sweet potato gives it an extra kick. A dish ideal if you want to combat the pandemic blues. Remember, this too, shall pass, but while it does, we might as well be as kind to ourselves as we can – and what better way to do this than via food we love to eat?

Curry

What you need:

  • 2 shallots, thinly sliced
  • 2 sweet potatoes, diced
  • 1 pack Sadie’s Kitchen Comforting Chicken Bone Broth
  • 1 medium onion, sliced
  • 3 tablespoons curry paste
  • 1 tablespoon ginger
  • 2 teaspoons paprika
  • 2 garlic cloves, chopped
  • 1 can (400g) coconut milk
  • 400g chopped tomatoes
  • 225g peas
  • Peanuts to garnish
  • Salt and pepper to taste
  • Serve with basmati rice

How to prepare:

  1. Add onion to a large pot with a little oil and allow to simmer over medium heat for 5 minutes.
  2. Stir in the garlic, curry paste, ginger, paprika and cook for 1 minute.
  3. Add in the coconut milk, bone broth, tomatoes, and sweet potatoes, bringing to the boil before allowing to simmer for around 25 minutes.
  4. Stir in the peas and cook everything for 1 more minute.
  5. Season and serve with rice.
