Despite claims that it’s springtime, it still very much feels like winter out there. But on the bright side, we are still in the thick of soup season! This super simple recipe is perfect for the seasonal transition, as it’s jam-packed with nutrients and vitamins. Tomatoes are a fantastic source of potassium and magnesium, as well as being a healthy source of fiber. They are also loaded with vitamins, including vitamin A, C & K, along with vitamin B6.
And that’s not all! The creaminess in this delicious soup comes from coconut milk, which in addition to its awesome taste, provides countless nutrients, such as; lauric acid, a medium-chain fatty acid that’s easily absorbed and used by the body for energy.
