This super simple recipe is perfect for the seasonal transition, as it’s jam-packed with nutrients and vitamins. Tomatoes are a fantastic source of potassium and magnesium, as well as being a healthy source of fibre. They are also loaded with vitamins, including vitamin A, C & K, along with vitamin B6.

And that’s not all! The creaminess in this delicious soup comes from coconut milk, which in addition to its awesome taste, provides countless nutrients, such as; lauric acid, a medium-chain fatty acid that’s easily absorbed and used by the body for energy.

Creamy Tomato Soup with Bone Broth

What you need:
2 tbs of coconut oil
1 large onion, diced
4 cloves garlic, finely chopped
8 large, fresh tomatoes, diced – OR – 2 cans of tomatoes
3 tbs of freshly chopped basl (dried is also fine)
1 pack of Sadie’s Kitchen Comforting Chicken Bone Broth
150ml of water
250mls of cup coconut milk
3 tbs of tomato paste
Salt & pepper

What to do:
In a pot, saute the onions in the coconut oil until soft and translucent
Add the minced garlic and tomatoes and saute for 3 minutes
Add the remaining to the pot and bring to the boil
Reduce to a simmer for at least 15 minutes
Blend to desired consistency
Sprinkle with chopped basil and serve.
