Definitely one of our go-to mid-week recipes. We like ours extra hot but you can adjust the spices to suit your family! This recipe is packed full of flavour and nutrition and is SO easy to prepare.
Just throw it all in the oven and let it do its thing!

What you need:
(serves 6)
4 chicken breasts, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 large onion, chopped
2 cloves of garlic, chopped
1 cup of basmati rice
1 pack of Sadie’s Kitchen Bone Broth
1 cup of passata – or tinned tomatoes
2 tbls of olive oil
Spices:
1 tbls cumin
1 tbls paprika
1 tbls chilli powder
1 tsp garlic powder
Salt & pepper to taste
What to do:
Preheat the oven to 180 degrees
Pop the olive oil, chicken, onion, peppers & garlic in a large bowl
Mix well to ensure everything is coated in oil
Combine spices & add to the chicken & veg mix
Add in chicken, peppers, onion & garlic.
Pop the rice into an oven dish
Mix the bone broth & passata together & pour over the rice
Place the chicken & veg mix on top & cover the dish with tinfoil
Bake for 45-50 minutes
Serve with some fresh coriander & some lime wedges.
