The mention of “France” and “World Cup” in the same sentence usually conjures up images of “HenryGate” and the notorious handball incident that denied Ireland a place in 2010. But let’s brush that aside for today’s game against Peru, because this recipe for French Onion Soup made with Sadie’s Kitchen is très quick, très simple and beyond delicious!

What you need:
3 large onions, thinly sliced
4 cloves of garlic, crushed
50g unsalted butter
3 packs of Sadie’s Kitchen Comforting Chicken Bone Broth
200g of water
3 tbls olive oil
1 tsp granulated sugar
1 bay leaf
275ml dry white wine
Salt & pepper
French baguette, buttered and cut into ½ inch slices
700g Gruyère
What to do:
Preheat to oven to 170C
Melt the butter in a large pot over a medium heat
Add the onions, garlic and sugar
Sauté until golden brown and then reduce heat to very low
Continue to cook the onions for 20 minutes until caramelised
Add the broth, wine, and the bay leaf
Season with salt and pepper
Bring to the boil, then reduce to a medium heat and allow to simmer
Place the slices of baguette on a rack in the centre of the oven
Bake for 20 minutes, turning once
Portion the soup into bowls
Pop in 2 – 3 slices of baguette
Add a good sprinkle of Gruyère
Pop under the grill for 3 – 5 minutes, until the cheese is browned and bubbling
Serve immediately
Tip: Use an oven glove when serving, as the bowls will be very hot
